A Little Fajita History
Did you know that fajitas originated in the ranch lands of South and West Texas in the 1930s? Mexican cowboys, or vaqueros, were often paid with less desirable cuts of beef, like skirt steak. They turned these cuts into something special by marinating, grilling, and slicing them, creating the first fajitas. The word “fajita” actually comes from faja, meaning “belt” or “strip,” referencing the cut of meat used.
Fajitas gained popularity in Tex-Mex cuisine in the 1970s and quickly became a staple on menus across the U.S. Today, they’re enjoyed with all kinds of protein and veggies, served sizzling in cast iron with warm tortillas and tasty toppings.

Ingredients:
- 1 lb chicken breast or skirt steak, sliced
- 2 bell peppers (red and green), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- Juice of 1 lime
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp paprika
- Salt & pepper to taste
- Flour tortillas
- Optional toppings: sour cream, guacamole, shredded cheese, salsa
Instructions:
- In a bowl, combine the oil, lime juice, and spices. Toss the meat to coat and marinate for 30 minutes.
- Heat a skillet over medium-high heat and cook the meat until browned. Set aside.
- In the same pan, sauté peppers and onions until tender.
- Return meat to the pan and heat through.
- Serve in warm tortillas with your favorite toppings.
