Try This Easy One-Pan Recipe to Make Mexican Food at Home

As much as we love to go out for Mexican food in NH, we have to cook at home most of the time. But in the summer, the idea of turning on the oven can be unpleasant, especially when it’s hot outside. Luckily, there are plenty of easy meals you can make on the stove, all in one pan. You can keep your house cooler, keep dirty dishes to a minimum, and have a delicious meal at home.

 

Try this easy one-pan ground beef recipe and enjoy tasty Mexican food at home!

One-Pan Mexican Meal

This recipe is great for a weeknight meal, and you can eat it on its own like a burrito bowl, spread it over nachos, or use it as taco or burrito filling.

Ingredients

  • Olive oil
  • 1 pound ground beef
  • Two bell peppers, any color, cut into strips
  • One onion, cut into strips
  • 2 cups salsa
  • 1 ½ cups beef broth or water (you may not need all of it)
  • One can of black or pinto beans, drained
  • 1 cup uncooked white rice
  • 1 cup shredded cheese (monterey jack, cheddar, or a blend is best)
  • Salt to taste

Instructions

Heat the olive oil in a large skillet over medium heat. Add the ground beef, spread it in an even layer across the bottom of the skillet, and let it cook for four to five minutes. Add the onions, peppers, and some salt. Stir them into the beef and let them cook for another five to six minutes, stirring occasionally. Stir in the salsa, broth (or water), beans, and rice. If you choose a watery salsa, you may only need one cup of broth. Turn the burner up to high and let the skillet come to a boil.

Once the liquid boils, reduce the heat to a simmer, cover the pan, and let it cook until all the liquid is absorbed and the rice is tender. That should take about 20 to 25 minutes. After the rice is cooked, remove the pan from the heat, stir, and sprinkle the cheese over the top. Cover the pan again and let it stand until the cheese melts. Serve it however you like and enjoy!
