The History Behind Tacos al Pastor

Tacos al pastor have one of the most fascinating stories in Mexican cuisine because their history crosses borders. The dish is now strongly associated with Mexican street food, but one of the techniques that helped shape it came to Mexico with Lebanese immigrants in the early 20th century. From there, Mexican cooks adapted the cooking method and flavors, eventually creating tacos al pastor, which became a street-food favorite.

From Shawarma to Mexico

Lebanese immigrants brought the tradition of cooking seasoned meat on a vertical spit to Mexico. The technique was associated with shawarma, in which meat is stacked and slowly cooked on a rotating spit. In Mexico, this cooking style was initially adapted into what became known as tacos árabes, particularly in Puebla.

Over time, Mexican cooks began adapting the technique further. Pork became the primary meat, and Mexican marinades, chiles, corn tortillas, onions, cilantro, and other familiar ingredients transformed the dish into something distinctly Mexican.

The Birth of the Trompo

One of the defining features of al pastor is the trompo, the vertical spit where layers of marinated pork rotate slowly beside the heat. As the outside cooks and develops a flavorful, slightly crisp edge, the meat is shaved off in thin pieces.

The technique does more than create an impressive presentation. Cooking the meat gradually allows different layers to develop different textures, while the marinade provides the characteristic savory, spicy flavor associated with al pastor.

A Mexican Street-Food Icon

By the 1960s, tacos al pastor had become established as a recognizable street food in Mexico City. Their popularity continued to grow, eventually making the style one of the country’s best-known tacos.
