Ingredients
- 1 tablespoon olive oil
- 10 corn tortillas, cut into strips
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup chopped tomatoes
- 1 teaspoon ground cumin
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- Optional garnishes:
- ½ cup chopped fresh cilantro
- 1 cup shredded cheese (cheddar or Monterey Jack are our top choices)
- ½ cup sour cream
- 1 avocado, diced
Instructions
First, heat the olive oil in a large pot over medium heat. Fry the tortilla strips for a few minutes until they are lightly brown and crispy. Set them aside and add a little more oil if necessary. Next, add the onion and cook until softened (about five minutes), then add the garlic and cook for one minute more. Add the chicken broth, tomatoes, cumin, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes. Serve the soup hot and top it with crispy tortilla strips. Garnish with cilantro, shredded cheese, sour cream, and avocado if desired.
